Slow Cooker Trader Joe’s Rosemary Beef Tips

2 pounds Trader Joe’s beef tips
1 tablespoon olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
1 cup beef broth
1/4 cup dry red wine
2 teaspoons fresh rosemary, chopped
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons cornstarch
2 tablespoons cold water

Instructions

Heat olive oil in a large skillet over medium-high heat.
Add beef tips and brown on all sides, about 3-4 minutes per side.
Transfer browned beef tips to the slow cooker.
In the same skillet, add diced onion and cook until softened, about 3 minutes.
Add minced garlic and cook for 1 minute until fragrant.
Pour in beef broth and dry red wine, scraping up any browned bits from the skillet.
Stir in chopped rosemary, dried thyme, salt, and black pepper.
Pour the mixture over the beef tips in the slow cooker.
Cover and cook on low for 6 hours until beef is tender.
About 15 minutes before serving, mix cornstarch and cold water in a small bowl to create a slurry.
Stir the slurry into the slow cooker to thicken the sauce.
Cover and cook on high for an additional 15 minutes.
Serve hot with your choice of sides.
