Slow Cooker Turkey White Bean Chili

A hearty and healthy slow cooker turkey white bean chili packed with tender ground turkey, creamy white beans, and a blend of mild spices, perfect for a comforting meal any day of the week.

Ingredients

1 pound ground turkey
1 medium yellow onion, diced
3 cloves garlic, minced
2 cans (15 ounces each) great northern beans, drained and rinsed
1 can (4 ounces) diced green chilies
3 cups low sodium chicken broth
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon chili powder
1/2 teaspoon smoked paprika
1/4 teaspoon black pepper
1/2 teaspoon salt
1 tablespoon olive oil
1/4 cup chopped fresh cilantro, for garnish
1/2 cup shredded Monterey Jack cheese, for garnish
1/2 cup sour cream, for garnish

Instructions

Heat olive oil in a large skillet over medium heat.
Add diced onion and cook for 3-4 minutes until softened.
Add minced garlic and cook for 1 minute until fragrant.
Add ground turkey to the skillet and cook until browned and cooked through, breaking it up with a spoon, about 6-7 minutes.
Transfer the cooked turkey, onions, and garlic to the slow cooker.
Add the drained and rinsed great northern beans, diced green chilies, chicken broth, ground cumin, dried oregano, chili powder, smoked paprika, black pepper, and salt to the slow cooker.
Stir all ingredients together until well combined.
Cover and cook on low for 6 hours.
After cooking, stir the chili and adjust seasoning with additional salt or pepper if desired.
Serve hot, garnished with chopped fresh cilantro, shredded Monterey Jack cheese, and a dollop of sour cream.
