A comforting and hearty slow cooker soup that captures all the flavors of stuffed cabbage without the hassle of rolling. This unstuffed cabbage soup is packed with ground beef, cabbage, tomatoes, and a blend of savory spices, perfect for an easy and satisfying meal.

1 pound ground beef
1 medium onion, diced
3 cloves garlic, minced
1 medium head green cabbage, chopped (about 6 cups)
1 (14.5 ounce) can diced tomatoes, undrained
1 (15 ounce) can tomato sauce
4 cups beef broth
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 medium carrots, peeled and sliced
2 stalks celery, sliced
1 tablespoon olive oil

Instructions

Heat olive oil in a large skillet over medium heat.
Add ground beef and diced onion to the skillet. Cook until the beef is browned and the onion is softened, about 5-7 minutes, breaking up the beef with a spoon as it cooks.
Add minced garlic and cook for an additional 1 minute until fragrant.
Transfer the cooked beef, onion, and garlic mixture to the slow cooker.
Add chopped cabbage, diced tomatoes with their juice, tomato sauce, beef broth, sliced carrots, and sliced celery to the slow cooker.
Stir in dried oregano, dried basil, smoked paprika, salt, and black pepper until well combined.
Cover and cook on low for 6 hours, or until the vegetables are tender and flavors have melded.
Stir the soup before serving and adjust seasoning with additional salt and pepper if desired.
