4 cups mashed sweet potatoes
1/2 cup maple syrup
1/2 cup milk
1/4 cup butter, melted
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup pecans, chopped
1 cup mini marshmallows (optional)
Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, combine the mashed sweet potatoes, maple syrup, milk, melted butter, eggs, vanilla extract, cinnamon, and nutmeg. Mix until smooth.
Pour the sweet potato mixture into a greased baking dish.
Sprinkle the chopped pecans evenly over the top.
If desired, add mini marshmallows on top of the pecans.
Bake in the preheated oven for 30-35 minutes, or until heated through and the top is golden brown.
Let cool slightly before serving. Enjoy!
Notes
For a vegan version, substitute milk with almond milk and eggs with flax eggs.
Adjust the sweetness by adding more or less maple syrup according to your taste.
This casserole can be made ahead of time and reheated before serving.
