Spicy Carrot Chickpea Dip

A delicious and spicy dip made from carrots and chickpeas, perfect for snacking or as a spread.

  • 1 cup grated carrots
  • 2 tablespoons tahini
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. In a food processor, combine the cooked chickpeas and grated carrots.
  2. Add tahini, olive oil, lemon juice, garlic powder, ground cumin, cayenne pepper, and salt.
  3. Blend until smooth, scraping down the sides as needed.
  4. Taste and adjust seasoning if necessary.
  5. Transfer to a serving bowl and garnish with fresh parsley.
  6. Serve with pita chips or fresh vegetables.

Notes

  • For a milder dip, reduce the amount of cayenne pepper.
  • This dip can be stored in the refrigerator for up to 5 days.
