  • 200g chorizo, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 can (400g) pumpkin puree
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced chorizo and cook until browned.
  3. Stir in the chopped onion and minced garlic, cooking until the onion is translucent.
  4. Add the ground cumin and smoked paprika, stirring for another minute.
  5. Mix in the pumpkin puree and vegetable broth, bringing the mixture to a simmer.
  6. Stir in the coconut milk and season with salt and pepper.
  7. Simmer for 15-20 minutes, allowing the flavors to meld.
  8. Blend the soup until smooth, if desired.
  9. Serve hot, garnished with fresh cilantro.
