Ingredients

  • 1 package of phyllo dough
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup cream cheese, softened
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
  3. Add chopped spinach and cook until wilted. Remove from heat and let cool.
  4. In a bowl, mix the cooled spinach mixture with feta cheese and cream cheese. Season with salt and pepper.
  5. Unroll the phyllo dough and cut it into squares. Layer several sheets together, brushing each layer with melted butter.
  6. Place the phyllo squares into a muffin tin to form cups.
  7. Fill each phyllo cup with the spinach and feta mixture.
  8. Brush the tops with beaten egg for a golden finish.
  9. Bake for 15-20 minutes or until the phyllo is golden brown and crispy.
