  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion, carrots, and celery, and sauté until softened.
  3. Add the minced garlic and cook for an additional minute.
  4. Add the stewing beef to the pot and brown on all sides.
  5. Pour in the beef broth and add the salt, pepper, thyme, and bay leaf.
  6. Bring to a boil, then reduce heat and let simmer for 1.5 to 2 hours until the beef is tender.
  7. Stir in the rice and cook for an additional 20 minutes, or until the rice is cooked through.
  8. Remove the bay leaf before serving.
