Sweet Potato and Apple Soup recipe

Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 2 apples, peeled, cored, and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Add diced sweet potatoes and chopped apples, stirring for a few minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and add cinnamon, nutmeg, salt, and pepper.
  6. Simmer for 20-25 minutes until sweet potatoes are tender.
  7. Use an immersion blender to puree the soup until smooth.
