  • 4 cups sweet potatoes, peeled and cubed
  • 1/2 cup brown sugar
  • 1/4 cup butter, melted
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup mini marshmallows (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil sweet potatoes in a large pot until tender, about 15-20 minutes.
  3. Drain and mash the sweet potatoes in a large bowl.
  4. Add brown sugar, melted butter, milk, eggs, vanilla extract, cinnamon, and nutmeg to the mashed sweet potatoes and mix well.
  5. Transfer the mixture to a greased baking dish.
  6. If desired, top with mini marshmallows.
  7. Bake in the preheated oven for 25-30 minutes, or until heated through and marshmallows are golden brown.
