Vegetarian Skillet Lasagna Recipe

A quick and easy vegetarian skillet lasagna recipe that is both delicious and satisfying, perfect for a weeknight dinner.

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • 1 jar (24 oz) marinara sauce
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add zucchini, bell pepper, and mushrooms; cook until tender.
  4. Stir in marinara sauce and bring to a simmer.
  5. Break lasagna noodles into pieces and add to the skillet, stirring to combine.
  6. Cover and cook for about 15 minutes, stirring occasionally, until noodles are tender.
  7. In a bowl, mix ricotta cheese with Italian seasoning, salt, and pepper.
  8. Spread the ricotta mixture over the noodles in the skillet.
  9. Top with mozzarella and Parmesan cheese.
  10. Cover and cook for an additional 5-10 minutes until cheese is melted and bubbly.

Notes

  • Feel free to add any other vegetables you like.
  • For a spicier version, add red pepper flakes.
