Classic Chicken Noodle Soup

2 chicken breasts
6 cups chicken broth
2 cups egg noodles
2 carrots, diced
2 celery stalks, diced
1 onion, diced
2 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 teaspoon fresh thyme leaves
1 teaspoon salt
1/2 teaspoon black pepper

Instructions

In a large pot, combine chicken breasts and chicken broth. Bring to a gentle simmer over medium heat.
Add diced carrots, celery, onion, garlic, thyme, salt, and black pepper to the pot.
Simmer uncovered for 30 minutes, until the chicken is cooked through and vegetables are tender.
Remove the chicken breasts and shred them with two forks.
Add egg noodles to the simmering broth and cook for 7-8 minutes until tender.
Return shredded chicken to the pot and stir to combine. Adjust seasoning as needed.
Serve hot in deep white ceramic bowls, garnished with fresh parsley sprigs.
