A moist and naturally sweet banana cake made without any added sugar, perfect for a healthy dessert or snack.
3 ripe bananas, mashed
2 large eggs
1/4 cup unsweetened applesauce
1/4 cup plain Greek yogurt
1 teaspoon vanilla extract
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup vegetable oil
Preheat the oven to 350°F (175°C). Grease and flour an 8-inch square baking pan.
In a large bowl, mash the ripe bananas with a fork until smooth.
Add the eggs, unsweetened applesauce, Greek yogurt, vegetable oil, and vanilla extract to the mashed bananas. Mix well until combined.
In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, ground cinnamon, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.
Pour the batter into the prepared baking pan and spread evenly.
Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and allow it to cool in the pan for 10 minutes.
Transfer the cake to a wire rack to cool completely before serving.
