Peanut Butter Greek Yogurt Banana Bread Muffin Bars

Delicious and moist peanut butter banana bread muffin bars made with creamy Greek yogurt for extra moisture and protein. Perfect for a snack or breakfast on the go!

1 1/2 cups ripe bananas, mashed (about 3 medium bananas)
1/2 cup creamy peanut butter
1/2 cup plain Greek yogurt
1/3 cup honey
2 large eggs
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt

Instructions

Preheat the oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper or grease it lightly.
In a large mixing bowl, combine the mashed bananas, peanut butter, Greek yogurt, honey, eggs, and vanilla extract. Mix until smooth and well combined.
In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.
Pour the batter into the prepared baking pan and spread it evenly.
Bake for 22-25 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and allow to cool completely in the pan on a wire rack.
Once cooled, lift the bars out using the parchment paper and cut into 12 equal bars.
