Cheesy Chicken Broccoli Rice Casserole with Knorr

A comforting and easy-to-make cheesy chicken broccoli rice casserole featuring Knorr seasoning for rich flavor. Perfect for a family dinner that combines tender chicken, fresh broccoli, and creamy cheese in a hearty rice base.

2 cups cooked white rice
2 cups cooked chicken breast, shredded
3 cups fresh broccoli florets
1 packet Knorr Chicken Flavor Recipe Mix (about 1.25 oz)
1 cup shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
1 cup sour cream
1/2 cup mayonnaise
1/2 cup milk
1/4 cup finely chopped yellow onion
2 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon black pepper
1/2 teaspoon salt
1/4 teaspoon paprika

Instructions

Preheat the oven to 350°F (175°C).
Steam the broccoli florets until tender but still crisp, about 4-5 minutes. Drain and set aside.
Heat olive oil in a medium skillet over medium heat. Add the chopped onion and minced garlic and sauté until soft and fragrant, about 3 minutes.
In a large mixing bowl, combine the cooked rice, shredded chicken, steamed broccoli, sautéed onion and garlic, Knorr Chicken Flavor Recipe Mix, sour cream, mayonnaise, milk, black pepper, salt, and paprika. Stir well until all ingredients are evenly incorporated.
Fold in 1/2 cup of the shredded cheddar cheese and 1/2 cup of the shredded mozzarella cheese into the mixture.
Transfer the mixture into a greased 9×13 inch casserole dish and spread evenly.
Sprinkle the remaining 1/2 cup cheddar cheese and 1/2 cup mozzarella cheese evenly over the top of the casserole.
Bake uncovered in the preheated oven for 35-40 minutes, or until the casserole is bubbly and the cheese on top is melted and golden brown.
Remove from the oven and let the casserole rest for 5 minutes before serving.
