Crock Pot Chicken Quinoa

A healthy and easy one-pot meal featuring tender chicken breasts cooked with quinoa, vegetables, and flavorful seasonings in a crock pot. Perfect for a nutritious dinner with minimal prep.

1 cup quinoa, rinsed
1 1/2 cups low-sodium chicken broth
2 boneless, skinless chicken breasts
1 cup diced carrots
1 cup diced celery
1 cup diced onion
2 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1/4 cup chopped fresh parsley

Instructions

Rinse the quinoa under cold water using a fine mesh strainer and set aside.
In a skillet, heat olive oil over medium heat. Add diced onion, carrots, and celery. Sauté for 3-4 minutes until slightly softened.
Add minced garlic and sauté for an additional 1 minute until fragrant. Remove from heat.
Place the rinsed quinoa in the bottom of the crock pot.
Add the sautéed vegetables on top of the quinoa.
Place the chicken breasts on top of the vegetables.
Sprinkle dried thyme, paprika, salt, and black pepper evenly over the chicken and vegetables.
Pour the chicken broth over all the ingredients in the crock pot.
Cover and cook on low for 4 hours, or until the chicken is cooked through and quinoa is tender.
Remove the chicken breasts and shred them with two forks, then return the shredded chicken to the crock pot and stir to combine.
Sprinkle chopped fresh parsley over the dish and stir gently.
Serve warm.
