2 pounds beef sirloin tips, cut into 1-inch pieces
1 tablespoon olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
1 cup beef broth, low sodium
1/2 cup sour cream, full fat
2 tablespoons Worcestershire sauce
1 teaspoon Dijon mustard
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons xanthan gum
Heat the olive oil in a large skillet over medium-high heat.
Add the beef sirloin tips and brown on all sides, about 3-4 minutes per side. Transfer browned beef to the crock pot.
In the same skillet, add the diced onion and cook for 3-4 minutes until softened.
Add the minced garlic and cook for an additional 1 minute until fragrant.
Pour the beef broth into the skillet and scrape up any browned bits from the bottom.
Stir in Worcestershire sauce, Dijon mustard, dried thyme, salt, and black pepper.
Pour the mixture over the beef tips in the crock pot.
Cover and cook on low for 6 hours until the beef is tender.
About 15 minutes before serving, remove 1/2 cup of the cooking liquid from the crock pot and whisk in the xanthan gum until smooth.
Stir the thickened mixture back into the crock pot to thicken the gravy.
Stir in the sour cream until fully combined and heated through. Do not boil after adding sour cream.
