1 medium zucchini, cut into 1/2-inch thick half-moons
1 medium red bell pepper, cut into 1-inch pieces
1 medium yellow bell pepper, cut into 1-inch pieces
2 medium carrots, peeled and sliced into 1/4-inch thick rounds
1 cup broccoli florets
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Preheat the air fryer to 375°F (190°C) for 5 minutes.
In a large mixing bowl, combine the zucchini, red bell pepper, yellow bell pepper, carrots, and broccoli florets.
