Tender and flavorful slow cooker chicken legs cooked to perfection with simple seasonings and a savory broth. Perfect for an easy, hands-off dinner.
8 chicken legs, skin-on and bone-in
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1 cup low sodium chicken broth
2 tablespoons olive oil
1 medium onion, sliced
3 cloves garlic, minced
In a small bowl, combine salt, black pepper, smoked paprika, garlic powder, onion powder, dried thyme, and dried oregano to create the seasoning mix.
Pat the chicken legs dry with paper towels. Rub the seasoning mix evenly over all sides of the chicken legs.
Heat olive oil in a large skillet over medium-high heat. Add the chicken legs and brown on all sides, about 3 minutes per side. Remove from heat.
Place the sliced onion and minced garlic in the bottom of the slow cooker.
Arrange the browned chicken legs on top of the onions and garlic in the slow cooker.
Pour the chicken broth over the chicken legs.
Cover and cook on low for 4 to 4 1/2 hours, or until the chicken legs are tender and the internal temperature reaches 165°F (74°C).
Once cooked, carefully remove the chicken legs from the slow cooker and let rest for 5 minutes before serving.
Serve the chicken legs with the cooked onions and spoon some of the broth over the top.
