This moist banana bread recipe is incredibly soft and flavorful, perfect for using up ripe bananas. It melts in your mouth with a tender crumb and a rich banana taste.

3 ripe bananas, mashed
1/2 cup unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon

Instructions

Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or non-stick spray.
In a large mixing bowl, mash the ripe bananas with a fork until smooth.
Add the melted butter to the mashed bananas and mix well.
Stir in the granulated sugar, then add the eggs one at a time, mixing well after each addition.
Add the vanilla extract and stir to combine.
In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.
Gradually add the dry ingredients to the banana mixture, stirring just until combined. Do not overmix.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center comes out clean.
Remove the banana bread from the oven and let it cool in the pan for 10 minutes.
Transfer the bread to a wire rack to cool completely before slicing and serving.
