A quick and easy single serving banana muffin, perfect for a delicious breakfast or snack. Made with ripe banana and simple ingredients, this muffin is moist and flavorful.
1/4 cup all-purpose flour
1 tablespoon granulated sugar
1/4 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon ground cinnamon
1/8 teaspoon salt
1/4 cup ripe banana, mashed (about half a small banana)
1 tablespoon vegetable oil
1 tablespoon milk
1/4 teaspoon vanilla extract
1 tablespoon chopped walnuts (optional)
Preheat the oven to 350°F (175°C).
In a small bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt.
In another bowl, combine the mashed banana, vegetable oil, milk, and vanilla extract. Stir until well mixed.
Add the dry ingredients to the wet ingredients and gently fold until just combined. Do not overmix.
If using, fold in the chopped walnuts.
Grease a small ramekin or use a silicone muffin cup. Pour the batter into the prepared container.
Bake in the preheated oven for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let cool for 5 minutes before enjoying.
