Gluten Free Apple Muffins

Delicious and moist gluten free apple muffins made with fresh apples and a blend of gluten free flours. Perfect for breakfast or a healthy snack.

2 cups gluten free all-purpose flour blend
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup granulated sugar
1/4 cup brown sugar, packed
2 large eggs
1/2 cup unsweetened applesauce
1/3 cup vegetable oil
1 teaspoon pure vanilla extract
1 cup peeled and finely chopped apple (about 1 medium apple)

Instructions

Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease the cups lightly.
In a large bowl, whisk together the gluten free all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt until well combined.
In a separate medium bowl, beat the eggs. Add the granulated sugar, brown sugar, unsweetened applesauce, vegetable oil, and vanilla extract. Mix until smooth.
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
Fold in the chopped apple pieces evenly through the batter.
Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
Bake in the preheated oven for 22 to 25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Remove the muffins from the oven and let them cool in the tin for 5 minutes. Then transfer the muffins to a wire rack to cool completely.
