1 pound raw shrimp, peeled and deveined
1/2 cup panko breadcrumbs
1/4 cup finely chopped green onions
1/4 cup finely chopped red bell pepper
2 cloves garlic, minced
1 large egg
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
1/2 teaspoon Old Bay seasoning
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Place the raw shrimp in a food processor and pulse 6-8 times until coarsely chopped but not pureed.
Transfer the chopped shrimp to a large mixing bowl.
Add panko breadcrumbs, chopped green onions, chopped red bell pepper, minced garlic, egg, mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning, salt, and black pepper to the bowl with shrimp.
Mix all ingredients thoroughly until well combined.
Form the mixture into 8 equal-sized patties, about 2.5 inches in diameter.
Preheat the air fryer to 375°F (190°C) for 3 minutes.
Brush both sides of each shrimp cake lightly with olive oil.
Place shrimp cakes in a single layer in the air fryer basket, making sure they do not touch. Cook in batches if necessary.
Air fry the shrimp cakes for 6 minutes, then carefully flip them over and air fry for an additional 6 minutes until golden brown and cooked through.
Remove the shrimp cakes from the air fryer and let them rest for 2 minutes before serving.
