Crock Pot Chicken and Stuffing

A comforting and easy one-pot meal featuring tender chicken breasts cooked with savory stuffing and creamy mushroom soup in a slow cooker.

4 boneless skinless chicken breasts
1 can (10.5 ounces) condensed cream of mushroom soup
1 cup chicken broth
1 package (6 ounces) herb seasoned stuffing mix
1/2 cup chopped onion
1/2 cup chopped celery
2 tablespoons unsalted butter, melted
1 teaspoon dried parsley flakes
1/2 teaspoon garlic powder
1/2 teaspoon black pepper

Instructions

In a medium bowl, combine the condensed cream of mushroom soup and chicken broth. Stir until smooth.
Place the chicken breasts in the bottom of the crock pot in a single layer.
In a separate large bowl, mix the stuffing mix, chopped onion, chopped celery, melted butter, dried parsley flakes, garlic powder, and black pepper until well combined.
Pour the soup and broth mixture evenly over the chicken breasts in the crock pot.
Spread the stuffing mixture evenly over the top of the chicken and soup mixture.
Cover the crock pot with the lid and cook on low for 4 to 4 1/2 hours, or until the chicken is cooked through and the stuffing is tender.
Carefully remove the chicken and stuffing from the crock pot using a large spoon or spatula and serve warm.
