One Pot Pasta with Broccoli

A quick and easy one pot pasta dish featuring tender broccoli florets cooked together with pasta in a flavorful garlic and Parmesan sauce. Perfect for a healthy weeknight dinner with minimal cleanup.

12 ounces penne pasta
4 cups broccoli florets
4 cups vegetable broth
2 cups water
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley

Instructions

In a large pot or deep skillet, combine the penne pasta, broccoli florets, vegetable broth, water, minced garlic, olive oil, salt, black pepper, and red pepper flakes.
Bring the mixture to a boil over medium-high heat, stirring occasionally to prevent the pasta from sticking.
Once boiling, reduce the heat to medium and simmer uncovered, stirring frequently, until the pasta is al dente and most of the liquid has been absorbed, about 12 to 15 minutes.
Remove the pot from heat and stir in the grated Parmesan cheese until melted and well combined.
Sprinkle chopped fresh parsley over the pasta and serve immediately.
