A quick and easy single-serving banana muffin made in the microwave. Perfect for a fast breakfast or snack when you’re short on time.
1 ripe banana, mashed (about 1/3 cup)
3 tablespoons all-purpose flour
1 tablespoon granulated sugar
1/4 teaspoon baking powder
1/8 teaspoon ground cinnamon
1 tablespoon vegetable oil
1 tablespoon milk
1/4 teaspoon vanilla extract
Pinch of salt
In a microwave-safe mug or small bowl, mash the ripe banana with a fork until smooth.
Add the all-purpose flour, granulated sugar, baking powder, ground cinnamon, and a pinch of salt to the mashed banana. Stir until combined.
Add the vegetable oil, milk, and vanilla extract to the mixture. Stir until the batter is smooth and well combined.
Microwave the batter on high for 90 seconds to 2 minutes, or until the muffin has risen and is set in the middle. Cooking times may vary depending on your microwave wattage.
Allow the muffin to cool for 1-2 minutes before eating. Enjoy directly from the mug or transfer to a plate.
