A creamy and flavorful chicken dish featuring tender chicken breasts topped with rich Boursin cheese infused with garlic and herbs, baked to perfection for a delicious and easy weeknight meal.

4 boneless, skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
4 ounces Boursin garlic and herb cheese
2 cloves garlic, minced
1 tablespoon fresh parsley, finely chopped
1 teaspoon fresh thyme leaves
1/2 teaspoon dried oregano
1/4 cup chicken broth

Instructions

Preheat the oven to 375°F (190°C).
Pat the chicken breasts dry with paper towels. Season both sides with salt and black pepper.
Heat the olive oil in a large oven-safe skillet over medium-high heat.
Add the chicken breasts to the skillet and sear for 3-4 minutes on each side until golden brown. Remove from heat.
In a small bowl, combine the Boursin cheese, minced garlic, chopped parsley, thyme leaves, and dried oregano.
Spread the Boursin mixture evenly over the top of each chicken breast.
Pour the chicken broth into the skillet around the chicken breasts.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Remove from the oven and let the chicken rest for 5 minutes before serving.
