1 pound ground beef
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
1 medium red bell pepper, diced
1 medium green bell pepper, diced
2 medium carrots, peeled and sliced
1 cup broccoli florets
1 cup zucchini, diced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano
1/2 teaspoon paprika
1/4 teaspoon crushed red pepper flakes
1/2 cup beef broth
2 tablespoons tomato paste
Heat the olive oil in a large skillet over medium-high heat.
Add the diced onion and minced garlic to the skillet and sauté for 2-3 minutes until the onion becomes translucent.
Add the ground beef to the skillet. Cook, breaking it apart with a spatula, until browned and cooked through, about 6-8 minutes.
Drain any excess fat from the skillet.
Add the diced red bell pepper, green bell pepper, sliced carrots, broccoli florets, and diced zucchini to the skillet. Stir to combine.
Season the mixture with salt, black pepper, dried oregano, paprika, and crushed red pepper flakes. Stir well to evenly distribute the spices.
Add the tomato paste and beef broth to the skillet. Stir to combine all ingredients.
Reduce the heat to medium, cover the skillet, and let the mixture simmer for 8-10 minutes, stirring occasionally, until the vegetables are tender but still crisp.
Remove the skillet from heat and serve the ground beef with vegetables hot.
