Taco Soup Freezer Meal with Ground Beef

A hearty and flavorful taco soup made with ground beef and a blend of beans, corn, and spices. Perfect for preparing ahead and freezing for an easy, comforting meal anytime.

1 pound ground beef
1 medium yellow onion, diced
2 cloves garlic, minced
1 (15-ounce) can black beans, drained and rinsed
1 (15-ounce) can kidney beans, drained and rinsed
1 (15-ounce) can corn, drained
1 (14.5-ounce) can diced tomatoes with green chilies
1 (8-ounce) can tomato sauce
1 (1-ounce) packet taco seasoning
2 cups beef broth
1 teaspoon ground cumin
1/2 teaspoon chili powder
Salt, to taste
Black pepper, to taste

Instructions

In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon, about 5-7 minutes.
Add the diced onion and minced garlic to the skillet with the ground beef. Cook until the onion is softened, about 3-4 minutes.
Drain any excess fat from the skillet.
Transfer the cooked beef mixture to a large pot or Dutch oven.
Add the black beans, kidney beans, corn, diced tomatoes with green chilies, tomato sauce, taco seasoning, beef broth, ground cumin, and chili powder to the pot.
Stir well to combine all ingredients.
Bring the soup to a boil over medium-high heat, then reduce heat to low and simmer uncovered for 20-25 minutes, stirring occasionally.
Season with salt and black pepper to taste.
Allow the soup to cool before portioning into freezer-safe containers for storage.
