2 cups low sodium chicken broth
1 tablespoon olive oil
1 small yellow onion, finely chopped
2 cloves garlic, minced
2 tablespoons whole wheat flour
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1/4 teaspoon salt
1/4 cup water

Instructions

Heat the olive oil in a medium saucepan over medium heat.
Add the finely chopped onion and cook for 4-5 minutes until translucent.
Add the minced garlic and cook for an additional 1 minute until fragrant.
Sprinkle the whole wheat flour over the onions and garlic, stirring constantly to form a roux. Cook for 2 minutes to remove the raw flour taste.
Gradually whisk in the low sodium chicken broth, ensuring there are no lumps.
Add the dried thyme, black pepper, and salt, stirring to combine.
Bring the mixture to a gentle boil, then reduce heat and simmer for 8-10 minutes, stirring occasionally, until the gravy thickens.
If the gravy is too thick, whisk in up to 1/4 cup water to reach desired consistency.
Taste and adjust seasoning if necessary, then remove from heat and serve warm.
