  • 2 lbs boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded cheese (optional)

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the white beans, corn, green chilies, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, shred the chicken with two forks and stir back into the chili.
  6. Stir in the sour cream and cheese (if using) before serving.

Notes

  • For a spicier version, add jalapeños or cayenne pepper.
  • Can be served with tortilla chips or over rice.
