Air Fryer Shrimp Dinner

A quick and delicious air fryer shrimp dinner featuring perfectly seasoned shrimp served with roasted vegetables and a side of lemon garlic rice. Ready in under 30 minutes, this meal is perfect for a healthy weeknight dinner.

1 pound raw shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups broccoli florets
1 red bell pepper, sliced into strips
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup long grain white rice
2 cups water
1 tablespoon unsalted butter
2 cloves garlic, minced
1 lemon, zested and juiced
2 tablespoons chopped fresh parsley

Instructions

Preheat the air fryer to 400°F (200°C).
In a medium bowl, combine the shrimp, 1 tablespoon olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Toss until shrimp are evenly coated.
In another bowl, toss broccoli florets and red bell pepper strips with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
Place the seasoned vegetables in the air fryer basket in an even layer. Air fry for 7 minutes.
After 7 minutes, add the shrimp on top of the vegetables in the air fryer basket. Continue cooking for an additional 8 minutes, shaking the basket halfway through cooking to ensure even crisping. Shrimp should be opaque and vegetables tender.
While the shrimp and vegetables cook, rinse the rice under cold water until water runs clear.
In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed rice and a pinch of salt. Reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and water is absorbed.
In a small skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant, stirring frequently to avoid burning.
When rice is done, fluff it with a fork and stir in the garlic butter, lemon zest, lemon juice, and chopped parsley.
Serve the air fried shrimp and vegetables over a bed of lemon garlic rice.
