A hearty and flavorful skillet dish combining savory apple chicken sausage with a colorful mix of harvest vegetables, perfect for a cozy dinner.
1 pound apple chicken sausage, sliced into 1/2-inch pieces
2 tablespoons olive oil
1 medium yellow onion, diced
2 cloves garlic, minced
2 medium carrots, peeled and sliced into 1/4-inch rounds
1 medium red bell pepper, diced
1 medium apple (such as Honeycrisp or Fuji), cored and diced
2 cups butternut squash, peeled and diced into 1/2-inch cubes
3 cups fresh kale, stems removed and chopped
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/4 teaspoon ground black pepper
1/2 teaspoon kosher salt
1/4 cup low sodium chicken broth
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add the sliced apple chicken sausage to the skillet and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove the sausage from the skillet and set aside.
In the same skillet, add the remaining 1 tablespoon of olive oil.
Add the diced yellow onion and cook for 3 minutes until softened.
Stir in the minced garlic and cook for 30 seconds until fragrant.
Add the sliced carrots, diced red bell pepper, diced apple, and diced butternut squash to the skillet. Cook for 8-10 minutes, stirring occasionally, until the vegetables begin to soften.
Sprinkle the dried thyme, dried rosemary, black pepper, and kosher salt over the vegetables and stir to combine.
Pour in the chicken broth, cover the skillet with a lid, and let the vegetables steam for 5 minutes until tender.
Remove the lid, add the chopped kale and cooked apple chicken sausage back into the skillet.
Stir everything together and cook for an additional 3-4 minutes until the kale is wilted and heated through.
Taste and adjust seasoning if needed, then remove from heat and serve warm.
