8 bone-in, skin-on chicken thighs
3 tablespoons olive oil
4 cloves garlic, minced
1 lemon, zested and juiced
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
2 tablespoons chopped fresh parsley

Instructions

Preheat the oven to 400°F (200°C).
In a small bowl, combine olive oil, minced garlic, lemon zest, lemon juice, dried oregano, salt, black pepper, and crushed red pepper flakes to make the marinade.
Place the chicken thighs in a large bowl or resealable plastic bag. Pour the marinade over the chicken and toss to coat evenly. Let marinate for at least 10 minutes at room temperature.
Arrange the chicken thighs skin-side up on a baking sheet lined with parchment paper or a lightly greased baking dish.
Bake in the preheated oven for 30 to 35 minutes, or until the chicken thighs are cooked through and the skin is crispy. The internal temperature should reach 165°F (74°C).
