Tender baked cod fillets served with a rich and tangy lemon butter sauce, perfect for a light and flavorful dinner.
4 cod fillets (6 ounces each), skinless and boneless
1 teaspoon salt
1/2 teaspoon black pepper
3 tablespoons unsalted butter
3 cloves garlic, minced
1/4 cup fresh lemon juice (about 2 lemons)
1 tablespoon fresh parsley, finely chopped
1 teaspoon lemon zest
1 tablespoon olive oil
Preheat the oven to 400°F (200°C).
Pat the cod fillets dry with paper towels. Season both sides with salt and black pepper.
Heat the olive oil in an oven-safe skillet over medium heat.
Add the cod fillets to the skillet and sear for 2 minutes on each side until lightly golden.
Transfer the skillet to the preheated oven and bake the cod for 8 to 10 minutes, or until the fish flakes easily with a fork.
While the cod is baking, melt the butter in a small saucepan over medium heat.
Add the minced garlic to the melted butter and cook for 1 to 2 minutes until fragrant, stirring frequently to avoid burning.
Remove the saucepan from heat and stir in the fresh lemon juice, lemon zest, and chopped parsley.
Once the cod is done baking, remove it from the oven and drizzle the lemon butter sauce evenly over each fillet.
