This baked cod in lemon butter sauce is a simple, flavorful dish featuring tender cod fillets baked to perfection and drizzled with a zesty lemon butter sauce. Perfect for a quick weeknight dinner or a special occasion.
4 cod fillets, about 6 ounces each, skinless and boneless
Salt, 1 teaspoon
Black pepper, 1/2 teaspoon
Olive oil, 2 tablespoons
Unsalted butter, 4 tablespoons
Garlic, 3 cloves, minced
Fresh lemon juice, 3 tablespoons
Lemon zest, 1 teaspoon
Fresh parsley, 2 tablespoons, finely chopped
Preheat the oven to 400°F (200°C).
Pat the cod fillets dry with paper towels and season both sides with salt and black pepper.
Heat the olive oil in a large oven-safe skillet over medium-high heat.
Add the cod fillets to the skillet and sear for 2 minutes on each side until lightly golden.
Transfer the skillet to the preheated oven and bake the cod for 8 to 10 minutes, or until the fish flakes easily with a fork.
While the cod is baking, melt the butter in a small saucepan over medium heat.
Add the minced garlic to the melted butter and cook for 1 minute until fragrant, stirring frequently to avoid burning.
