2 cups cooked chicken breast, shredded or diced
1/2 cup mayonnaise
1/4 cup dried cranberries, chopped
1/4 cup celery stalks, finely chopped
2 tablespoons red onion, finely chopped
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
8 slices whole wheat sandwich bread
4 leaves romaine lettuce

Instructions

In a medium mixing bowl, combine the cooked chicken, mayonnaise, chopped dried cranberries, chopped celery, and chopped red onion.
Add the fresh lemon juice, salt, and black pepper to the bowl.
Mix all ingredients thoroughly until well combined.
