1 tablespoon olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
2 medium carrots, peeled and diced
2 celery stalks, diced
4 cups butternut squash, peeled and diced
1 cup quinoa, rinsed
6 cups low-sodium chicken broth
2 cups cooked chicken breast, shredded
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon ground black pepper
1/2 teaspoon salt
2 cups fresh spinach, chopped
1 tablespoon fresh parsley, chopped

Instructions

Heat the olive oil in a large pot over medium heat.
Add the diced onion, minced garlic, diced carrots, and diced celery to the pot. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened.
Add the diced butternut squash to the pot and stir to combine with the other vegetables.
Pour in the chicken broth and bring the mixture to a boil.
Once boiling, add the rinsed quinoa, dried thyme, dried rosemary, salt, and black pepper.
Reduce the heat to low, cover the pot, and let the soup simmer for 20 minutes, or until the quinoa and butternut squash are tender.
Stir in the shredded cooked chicken and chopped spinach. Cook for an additional 5 minutes until the spinach is wilted and the chicken is heated through.
Remove the pot from heat and stir in the chopped fresh parsley.
Ladle the soup into bowls and serve warm.
