A healthy and creamy chicken salad made with Greek yogurt instead of mayonnaise, packed with fresh vegetables and herbs for a light and flavorful meal.
2 cups cooked chicken breast, shredded or diced
1/2 cup plain Greek yogurt
1/4 cup celery, finely chopped
1/4 cup red bell pepper, finely chopped
1/4 cup red onion, finely chopped
1 tablespoon fresh parsley, chopped
1 tablespoon fresh dill, chopped
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup sliced almonds, toasted
In a large mixing bowl, combine the Greek yogurt, lemon juice, Dijon mustard, salt, and black pepper. Stir well until smooth.
Add the shredded or diced cooked chicken to the bowl with the yogurt dressing.
Add the chopped celery, red bell pepper, red onion, parsley, and dill to the bowl.
Gently fold all ingredients together until the chicken and vegetables are evenly coated with the yogurt dressing.
Sprinkle the toasted sliced almonds over the salad and gently mix to incorporate.
