2 cups cooked chicken breast, shredded or diced
1/2 cup plain Greek yogurt
1/4 cup celery, finely chopped
1/4 cup red bell pepper, finely chopped
1/4 cup red onion, finely chopped
1/4 cup cucumber, finely chopped
2 tablespoons fresh parsley, chopped
1 tablespoon fresh lemon juice
1/2 teaspoon Dijon mustard
1/4 teaspoon garlic powder
Salt, to taste
Black pepper, to taste

Instructions

In a large mixing bowl, combine the Greek yogurt, lemon juice, Dijon mustard, garlic powder, salt, and black pepper. Stir until smooth.
Add the cooked chicken, celery, red bell pepper, red onion, cucumber, and parsley to the bowl with the dressing.
Gently fold all ingredients together until the chicken and vegetables are evenly coated with the yogurt dressing.
Taste and adjust seasoning with additional salt and pepper if needed.
Serve immediately or refrigerate for up to 2 days before serving.
