1 tablespoon olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
2 medium carrots, peeled and diced
2 celery stalks, diced
4 cups butternut squash, peeled and diced
1 cup quinoa, rinsed
6 cups low-sodium chicken broth
2 cups cooked chicken breast, shredded
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon ground black pepper
1/2 teaspoon salt
2 cups fresh spinach, chopped
1 tablespoon fresh parsley, chopped

Instructions

Heat olive oil in a large pot over medium heat.
Add diced onion, carrots, and celery to the pot. Sauté for 5 minutes until vegetables begin to soften.
Add minced garlic and cook for 1 minute until fragrant.
Add diced butternut squash to the pot and stir to combine with the vegetables.
Pour in the chicken broth and bring the mixture to a boil.
Once boiling, reduce heat to a simmer and add rinsed quinoa, dried thyme, dried rosemary, salt, and black pepper.
Cover and simmer for 20 minutes, or until the butternut squash and quinoa are tender.
Add shredded cooked chicken and chopped spinach to the pot. Stir well and cook for an additional 5 minutes until the spinach wilts and the chicken is heated through.
Remove the pot from heat and stir in fresh parsley.
Ladle the soup into bowls and serve warm.
