A quick and creamy pasta dish made with cottage cheese for a healthy twist on traditional creamy sauces. Perfect for a comforting weeknight meal.
12 ounces pasta (such as penne or fusilli)
1 tablespoon olive oil
3 cloves garlic, minced
1 cup cottage cheese
1/2 cup grated Parmesan cheese
1/4 cup milk
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
2 tablespoons chopped fresh parsley
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
While the pasta cooks, heat the olive oil in a large skillet over medium heat.
Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.
In a medium bowl, combine the cottage cheese, grated Parmesan cheese, milk, salt, black pepper, and crushed red pepper flakes. Stir until smooth and creamy.
Add the cooked pasta to the skillet with the garlic and toss to coat in the olive oil.
Reduce the heat to low and pour the cottage cheese mixture over the pasta. Stir gently until the sauce is evenly distributed and warmed through, about 2-3 minutes. Do not boil.
Remove from heat and sprinkle with chopped fresh parsley.
Serve immediately.
