1 pound large shrimp, peeled and deveined
1 medium red bell pepper, cut into 1-inch pieces
1 medium zucchini, sliced into 1/2-inch rounds
1 medium yellow squash, sliced into 1/2-inch rounds
1 cup broccoli florets
3 tablespoons olive oil, divided
3 cloves garlic, minced
1 teaspoon dried Italian seasoning
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh parsley

Instructions

Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a large bowl, combine the shrimp, red bell pepper, zucchini, yellow squash, and broccoli florets.
In a small bowl, whisk together 2 tablespoons olive oil, minced garlic, dried Italian seasoning, smoked paprika, salt, and black pepper.
Pour the seasoning mixture over the shrimp and vegetables. Toss well to coat evenly.
Place the shrimp and vegetable mixture in the air fryer basket in a single layer. You may need to cook in batches depending on the size of your air fryer.
Air fry at 400°F (200°C) for 10 to 12 minutes, shaking the basket halfway through cooking to ensure even crisping. Shrimp should be opaque and vegetables tender-crisp.
Transfer the cooked shrimp and vegetables to a serving dish.
Drizzle with the remaining 1 tablespoon olive oil and fresh lemon juice.
Sprinkle chopped fresh parsley over the top before serving.
