2 medium cucumbers, thinly sliced
3 medium tomatoes, diced
1 small red onion, thinly sliced
1/4 cup fresh lemon juice (about 1 large lemon)
2 tablespoons extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons chopped fresh parsley
In a large bowl, combine the thinly sliced cucumbers, diced tomatoes, and thinly sliced red onion.
In a small bowl, whisk together the fresh lemon juice, extra virgin olive oil, salt, and freshly ground black pepper until well combined.
