Air Fryer Breaded Salmon Nuggets

Crispy on the outside and tender on the inside, these air fryer breaded salmon nuggets make a delicious and healthy snack or meal. Perfectly seasoned and coated with a crunchy breadcrumb crust, they cook quickly in the air fryer for a guilt-free treat.

1 pound fresh salmon fillet, skin removed, cut into 1-inch cubes
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
2 large eggs
1 tablespoon water
3/4 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
1 teaspoon paprika
1/2 teaspoon dried parsley

Instructions

Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a shallow bowl, combine the all-purpose flour, salt, black pepper, and garlic powder.
In a second shallow bowl, whisk together the eggs and water until well combined.
In a third shallow bowl, mix the panko breadcrumbs, grated Parmesan cheese, paprika, and dried parsley.
Dip each salmon cube first into the flour mixture, coating all sides, then into the egg mixture, and finally into the breadcrumb mixture, pressing gently to adhere the coating well.
Place the breaded salmon nuggets on a plate or tray.
Lightly spray the air fryer basket with cooking spray. Arrange the salmon nuggets in a single layer in the basket, making sure they do not touch or overlap. You may need to cook in batches.
Spray the tops of the salmon nuggets lightly with cooking spray.
Air fry the salmon nuggets at 400°F (200°C) for 10 to 12 minutes, flipping halfway through, until golden brown and cooked through. The internal temperature should reach 145°F (63°C).
Remove the salmon nuggets from the air fryer and let them rest for 2 minutes before serving.
