1 pound raw shrimp, peeled and deveined
1/2 cup panko breadcrumbs
1 large egg
1/4 cup finely chopped green onions
2 cloves garlic, minced
1 tablespoon mayonnaise
1 teaspoon Dijon mustard
1 teaspoon lemon juice
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil, divided

Instructions

Place the raw shrimp in a food processor and pulse 6-8 times until coarsely chopped but not pureed.
Transfer the chopped shrimp to a large mixing bowl.
Add the panko breadcrumbs, egg, chopped green onions, minced garlic, mayonnaise, Dijon mustard, lemon juice, smoked paprika, cayenne pepper, salt, and black pepper to the bowl.
Mix all ingredients together until well combined.
Divide the mixture into 8 equal portions and shape each portion into a round patty about 3 inches in diameter and 1/2 inch thick.
Brush both sides of each shrimp patty with olive oil to help them crisp in the air fryer.
Preheat the air fryer to 375°F (190°C) for 3 minutes.
Place the shrimp patties in a single layer in the air fryer basket, leaving space between each patty. You may need to cook in batches depending on the size of your air fryer.
Cook the patties at 375°F (190°C) for 6 minutes.
Carefully flip the patties and cook for an additional 6 minutes, or until the patties are golden brown and cooked through.
Remove the shrimp patties from the air fryer and let them rest for 2 minutes before serving.
