8 bone-in, skin-on chicken thighs
1 cup pineapple juice
1 cup fresh pineapple chunks
2 tablespoons honey
2 tablespoons soy sauce
1 tablespoon apple cider vinegar
1 teaspoon garlic powder
1 teaspoon ground ginger
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
2 green onions, thinly sliced

Instructions

Preheat the oven to 400°F (200°C).
In a medium bowl, whisk together pineapple juice, honey, soy sauce, apple cider vinegar, garlic powder, ground ginger, salt, and black pepper to create the pineapple glaze.
Pat the chicken thighs dry with paper towels and rub them with olive oil.
Place the chicken thighs in a single layer in a baking dish or ovenproof skillet.
Pour half of the pineapple glaze over the chicken thighs, reserving the other half for later.
Scatter the fresh pineapple chunks evenly around the chicken in the baking dish.
Bake the chicken thighs in the preheated oven for 25 minutes.
Remove the baking dish from the oven and brush the reserved pineapple glaze over the chicken thighs.
Return the chicken to the oven and bake for an additional 10 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy.
Remove the chicken from the oven and let it rest for 5 minutes.
Garnish with thinly sliced green onions before serving.
