8 bone-in, skin-on chicken thighs
3 tablespoons olive oil
4 cloves garlic, minced
1 lemon, zested and juiced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
Fresh parsley, chopped (for garnish)
Preheat the oven to 400°F (200°C).
In a small bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, dried oregano, dried thyme, salt, and black pepper. Stir well to create the marinade.
Place the chicken thighs in a large bowl or zip-top bag. Pour the marinade over the chicken and toss to coat evenly. Let marinate for at least 10 minutes at room temperature.
Arrange the chicken thighs skin-side up in a single layer on a baking sheet or in a roasting pan.
Bake in the preheated oven for 35 to 40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden and crispy.
Remove from the oven and let the chicken rest for 5 minutes.
