2 boneless skinless chicken breasts
1 medium yellow onion, diced
3 medium carrots, peeled and sliced
3 celery stalks, sliced
3 cloves garlic, minced
6 cups low-sodium chicken broth
1 teaspoon dried thyme
1 teaspoon dried oregano
1 bay leaf
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup orzo pasta
2 tablespoons fresh parsley, chopped
1 tablespoon fresh lemon juice

Instructions

Place the chicken breasts in the bottom of the crock pot.
Add the diced onion, sliced carrots, sliced celery, and minced garlic on top of the chicken.
Pour in the chicken broth, then add the dried thyme, dried oregano, bay leaf, salt, and black pepper.
Cover and cook on low for 4 hours.
After 4 hours, remove the chicken breasts and shred them using two forks.
Return the shredded chicken to the crock pot.
Add the orzo pasta to the crock pot and stir well.
Cover and cook on high for an additional 30 minutes, or until the orzo is tender.
Remove and discard the bay leaf.
Stir in the chopped fresh parsley and fresh lemon juice.
Taste and adjust seasoning with additional salt and pepper if desired.
Serve hot and enjoy.
