Delicious and easy-to-make spinach artichoke dip served in crispy filo cups, perfect for parties and appetizers.
12 sheets filo pastry
1/2 cup unsalted butter, melted
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 (14 ounce) can artichoke hearts, drained and chopped
1/2 cup cream cheese, softened
1/4 cup sour cream
1/4 cup mayonnaise
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
Preheat the oven to 350°F (175°C).
Brush a 24-cup mini muffin tin with some of the melted butter.
Lay one sheet of filo pastry on a clean surface and brush it lightly with melted butter.
Place another sheet on top and brush with butter again. Repeat until you have 6 layers stacked.
Cut the stacked filo sheets into 24 squares, approximately 4×4 inches each.
Gently press each filo square into the mini muffin tin cups to form cups.
Brush the tops of the filo cups with more melted butter.
Bake the filo cups for 8-10 minutes or until golden and crisp. Remove from oven and let cool slightly.
In a medium bowl, combine the chopped spinach, chopped artichoke hearts, cream cheese, sour cream, mayonnaise, mozzarella cheese, Parmesan cheese, minced garlic, salt, and black pepper. Mix until well combined.
Spoon about 1 tablespoon of the spinach artichoke dip mixture into each filo cup.
Return the filled filo cups to the oven and bake for an additional 7-8 minutes until the filling is heated through and bubbly.
Remove from oven and allow to cool for 5 minutes before serving.
